Make-Your-Own Snack Mix

The idea is to have several different ingredients on hand. Children can mix and match the ingredients to make their very own snack mix. This snack is also a great CONNECTION OPPORTUNITY: involve your kids with the preparation (even the grocery shopping). They can also decorate the bags for craft time!

PLEASE NOTE: Great for adults too!

Here are some ideas of foods that you may want to have the children choose from:

* mini whole wheat crackers
* popcorn
* non-sugar coated cereal
* raisins (non sugar coated)
* nuts
* sunflower seeds
* pumpkin seeds
* dried fruit  (non sugar coated)
* animal crackers
* pretzels
* high fiber cereals (low in sugar)
* semi sweet chocolate chips
* almonds
* soy nuts
* cut up granola bars (look for lower sugar and higher fiber bars)

Necessary:
* Sealable bags for mixing

Method:
1. Have children choose their favourite foods
2. Have children put their choices into a sealable bag
3. Shake

Peanut Banana Wraps

A comforting after school snack. A bit messy, so be sure to have napkins on hand!

1/3 all natural peanut butter
1 tbs of liquid honey
1 tbs plain yogurt
1 tbs wheat germ
1 tbs ground flax seed
2 Medium whole wheat flour tortillas
2 Small bananas, sliced

Mix natural peanut butter, honey, plain yogurt, wheat germ and flax seed in small bowl.
Spread peanut butter mix evenly on each tortilla, leaving 1 inch (2.5 cm) edge.

Arrange banana slices, overlapping, down centre of peanut butter. Fold in sides. Roll up from bottom to enclose bananas securely. Cut in half diagonally. Makes 4 halves.

Funky Fruit Skewers

Prep time: 15 minutes

Ingredients:
* 1 apple
* 1 banana
* 1/3 c. red seedless grapes
* 1/3 c. green seedless grapes
* 2/3 cup pineapple chunks
* 1 cup lowfat PLAIN yogurt
* ¼ c. dried coconut, shredded mixed with 1/8 cup of ground flaxseed

Utensils:
* knife (you’ll need help from your adult assistant)
* 2 wooden skewer sticks
* large plate

Directions:
1. Prepare the fruit by washing the grapes, washing the apples and cutting them into small squares, peeling the bananas and cutting them into chunks, and cutting the pineapple into chunks, if it’s fresh. Put the fruit onto a large plate.
2. Spread coconut onto another large plate.
3. Slide pieces of fruit onto the skewer and design your own kabob by putting as much or as little of whatever fruit you want! Do this until the stick is almost covered from end to end.
4. Hold your kabob at the ends and roll it in the yogurt, so the fruit gets covered. Then roll it in the coconut and ground flaxseed.
5. Repeat these steps with another skewer.

Serves: 4    Serving size: 1 kabob

Variations and suggestions:
Roll your kabobs in something besides coconut. Try granola, nuts, or raisins, or use your imagination and have FUN!
